What Is Coconut Ghee?

Coconut ghee is a cooking fat made by blending ghee with virgin coconut oil. Green Pasture Blue Breeze® Virgin Coconut Ghee combines the rich, buttery qualities of ghee with the smooth texture and versatility of organic virgin coconut oil. Both fats have long histories of use in traditional cooking, and together they create a convenient, ready-to-use option for sautéing, roasting, baking, and everyday meals.

In this garlic shrimp recipe, our Coconut Ghee adds richness and helps carry the flavors of garlic, paprika, lemon, and fresh herbs throughout the dish.

Green Pasture Blue Breeze Virgin Coconut Ghee measured into a bowl for a garlic shrimp recipe.

Ingredients

  • 1 pound peeled and deveined wild caught shrimp
  • 1½ tablespoons Green Pasture Coconut Ghee
  • 3 garlic cloves, minced
  • ¼ teaspoon Celtic sea salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon paprika
  • Juice of ½ lemon
  • 1 teaspoon chopped fresh parsley
  • Optional: Pinch of red pepper flakes

Instructions

1. Dry and season the shrimp

Pat the shrimp thoroughly dry with a clean towel. Place them in a bowl and season with sea salt, black pepper, and paprika. Toss gently until the seasonings are evenly distributed.

2. Warm the Coconut Ghee

Place a large skillet over medium heat. Add the Green Pasture Coconut Ghee and allow it to melt, coating the bottom of the skillet.

3. Briefly cook the garlic

Add the minced garlic to the skillet. Cook briefly, stirring frequently, just until the garlic becomes fragrant. Avoid letting it brown too deeply.

4. Cook the shrimp

Arrange the seasoned shrimp in a single layer. Cook for approximately 2 minutes on the first side. Turn the shrimp and cook for another 1 to 2 minutes, or until they are pink, pearly, opaque, and fully cooked.

Cooking times can vary depending on the size of the shrimp and the heat of the skillet.

5. Finish with lemon and herbs

Remove the skillet from the heat. Squeeze the fresh lemon juice over the shrimp and sprinkle with chopped parsley. Add a pinch of red pepper flakes for extra heat, if desired. Toss gently to coat the shrimp in the lemony Coconut Ghee pan juices, then serve immediately.

What to Serve with Garlic Shrimp

This lemon garlic shrimp pairs especially well with simple, traditionally prepared whole food sides that can soak up the flavorful Coconut Ghee and lemon pan juices.

Try serving it with:

  • Mashed potatoes made with butter or cream
  • Roasted or sautéed asparagus
  • Buttered green beans
  • Broth cooked or traditionally prepared grains
  • True sourdough bread
  • Roasted vegetables
  • Creamy cauliflower mash made with butter or cream
  • A crisp cabbage slaw with homemade dressing
  • Fermented vegetables served on the side
  • A simple green salad with homemade vinaigrette

Can I Use Frozen Shrimp?

Yes. Frozen shrimp work well in this garlic shrimp recipe. Thaw them completely before cooking, then drain and pat them very dry. Avoid cooking the shrimp while they are still covered in ice, as the extra moisture can dilute the seasonings and affect the texture.

What Size Shrimp Should I Use?

Medium, large, or extra-large shrimp will all work. Larger shrimp may need slightly more time in the skillet, while smaller shrimp may cook in less than 2 minutes per side. Use their color, texture, and temperature, not cooking time alone to determine when they are fully cooked. PS: Be sure to look for the MSC Blue Fish Label when shopping for seafood of any kind!

Can I Make This Recipe Spicy?

Yes. Add a pinch of red pepper flakes with the finishing herbs, or increase the amount according to your preference. For more heat, add a small pinch to the skillet with the garlic. Keep in mind that red pepper flakes can become more potent as they cook in the fat.  Try PLUCK Southwest for a more mild spice and a little bonus dash of organ meats.
