Ingredients (Makes about 6 small popsicles depending on the size of your popsicle molds.)
- 1 cup ripe in season organic strawberries, hulled
- 3/4 cup raw, grass-fed cream
- 2 pasture-raised egg yolks
- 3 tablespoons raw honey
- 1 teaspoon vanilla extract
- Green Pasture Fermented Cod Liver Oil: add 1/2 teaspoon per popsicle (adjust based on the number of molds)
- 2 teaspoons fresh lemon juice
- Pinch of celtic sea salt

Instructions
- Blend the strawberries
- Using a blender or food processor, blend until smooth. (Or leave strawberries chunky for a different texture!)
- Prepare the custard base
- In a bowl, whisk the egg yolks and honey together until slightly thickened.
- Add cream and flavorings
- Whisk in the raw cream, vanilla extract, sea salt, and lemon juice.
- Combine
- Pour the cream mixture over the strawberry puree and blend until fully incorporated.
- Add the Fermented Cod Liver Oil
- Add in the oil at the end and blend well, allowing it to emulsify evenly throughout the mixture. This step is key for a smooth, consistent flavor.
- Taste and adjust
- Add a touch more honey for sweetness or lemon juice for extra brightness, depending on your family's preference.
- Freeze
- Pour mixture into popsicle molds, insert sticks, and freeze for 4–6 hours, or until fully frozen.

Tips:
For creamier popsicles: Add more raw cream and egg yolk.
For easier unmolding: Let popsicles sit at room temperature for 1–2 minutes before serving, or run the molds under warm water for a few seconds.
What to do with leftovers: If you have extra mixture after filling your molds, enjoy it as a smoothie!
